Pizza Toasts for Lazy Days
Today’s post is already thinking about the weekend. This recipe is perfect for a lazy Sunday’s brunch. You cook with the ingredients you have in the pantry, use any type of bread you like (or have leftovers of), and it’s quick to do. I’m one of those persons who love to spend time preparing a meal. I don’t mind spending the whole afternoon in the kitchen cooking dinner, making desserts, and appetizers. But some days, it feels good to just lazy around the house, not doing much. For those moments, pizza toasts are kings. It takes less than 5 minutes preparing and an extra 10, to cook it. Which, in the meantime, you can be doing other things, like a fresh orange juice to go with – ok, now I’m thirsty.
This recipe is no work at all, and if just the name pizza doesn’t make you jump out of bed, I’m sorry to say this but you, my friend, are a lost cause. Surely, the perfect brunch would be to someone bring the food to you while you’re still in bed. But, even I can make the effort to walk to the kitchen without needing to be told twice.
From a couple of experiments in the past, I especially like to do this recipe with stale bread since it won’t absorb as much ketchup as freshly baked bread. So the middle can stay crunchy and not soggy at all. Also, do yourself a favour and use herbs. Adding just a sprinkle of oregano, thyme, basil or other herbs, can take a pizza to another level. I usually always add basil when it’s a tomato based recipe, even though this time, I forgot about it. Ups…
Ingredients:
Stale Bread
Ketchup or Tomato sauce
Mozzarella Cheese
Bacon
Oregano
Thyme
1. Cut the bread in half and spread out ketchup all over it with the help of a knife or a spoon.
2. Then add the toppings you prefer. I went for a simple pizza just with bacon.
3. Cover everything with lots of mozzarella cheese and season with oregano and thyme.
4. Now you just have to put them into the oven at 180 degrees for about 10 minutes, or until the cheese has melted and the bread is crispy. Enjoy while hot!
I actually let mine in the oven a bit too long, which is a shame. Now they don’t have the great Instagram look I was looking for. But it still tastes amazing. So now if you excuse me, they are calling for me.
